Tropical Chicken Packets Recipe
People have known to like easy; easy in everything; even in cooking. We welcome ‘easy to make meals’ with open arms, but then again ‘less taste’ is unacceptable. Here is the recipe for the people who lead fast paced life with unique taste buds. This easy to prepare recipe ensures moist and tender chicken with a combination of sweet and sour flavors but by no means overpowering the original taste of the chicken. It offers ‘less cleanup’ for the people who hates cleaning; and best suitable for the camping trips.
4 boneless skinless chicken breasts
1 can pineapple(Sliced thin and drained)
¼ teaspoon Salt
½ teaspoon freshly ground black pepper
1 medium sized red bell pepper(thinly sliced, lengthwise)
½ cup sauce
2 scallions(thinly sliced)
1 heavy-duty aluminum foil
½ tablespoon olive oil
¼ cup soy sauce
¼ cup rice vinegar
3 tablespoons honey
1 teaspoon of garlic powder
Salt to your taste
Take a medium bowl and combine all the ingredients listed under the sauce except salt. Soy sauce comes with a lot of salt. Taste the mixture once after mixing it well for 30 seconds; add salt if needed. Set it aside.
Preheat the oven to 350 degrees F. Take 1 heavy- duty aluminum foil and cut into 4 pieces large enough to hold a single piece. Brush lightly with olive oil. Keep them aside.
Clean the chicken breasts thoroughly with water; pat it to dry with the help of a paper towel. Distribute ¼ teaspoon salt and ½ teaspoon pepper mixture between 4 pieces of the chicken. Coat them evenly.
With one piece at a time dip the chicken breast in the prepared sauce. Give each piece a full 5-10 seconds marinating in the mixture before taking it out. Put it on the prepared heavy-duty foil; Top each chicken breast with pineapple pieces, red bell pepper rings and onion rings. Pour remaining sauce on the chicken pieces equally; take all four edges of the foil over the chicken piece and seal it together in a loose packet; loose enough to circulate the pressure inside the packet.
Arrange all the packets on a baking sheet and bake it for 20 minutes. Take it out of the oven when it’s done. With the help of a fork, check for the doneness of the chicken after opening it. Take necessary precautions to avoid the steam which will be in the packets when you open it. Serve it hot with rice and some green salad to go with it.
Notes & Tips:
You can either grill the packets or use a stovetop to cook instead of baking it. Grill them on medium to high for 20 minutes.
Boneless, skinless chicken thighs will offer the same taste as chicken breasts.
If you are not a fan of soy sauce substitute it with fermented fish sauce.
This dish can be made with any sauce containing a mixture of sweet, sour and savory flavors.
You can use brown sugar in the place of honey to make the sauce.
