Spicy Chicken Recipe
When your taste buds seems to be hibernating and want to give them a little spicy kick to get out of that state, use this recipe to make spicy chicken. The spicy chicken in lime sauce with a bunch of fresh cilantro leaves makes it a crowd pleasing meal. Fresh taste of lime sauce really helps to lift up your spirits. Increase the quantities if you want more intense flavors. Adjust the spiciness according to your preference. Reheating the leftovers is also very easy which makes it perfect for office lunches.
4 boneless and skinless chicken breast halves
½ teaspoon salt(or to your preference)
½ teaspoon freshly ground black pepper
1 tablespoon olive oil
2 tablespoons butter(melted)
3 garlic cloves(minced)
1 teaspoon cayenne pepper
½ cup chicken stock
2 tablespoons thinly sliced fresh cilantro(optional)
4 tablespoons lemon juice
Clean the chicken with water; pat it with a paper towel to dry.
In a large bowl mix salt, 2 tablespoons of lemon juice, 1 tablespoon olive oil, half amount of minced garlic, ½ teaspoon pepper and 1 teaspoon cayenne pepper. Add the chicken breasts to the mix; use your fingers to distribute the marinade equally between the pieces. Cover the bowl with a lid; let it rest for 30 minutes.
Heat 2 tablespoons of butter in a non-stick skillet over medium-high flame. Separate the chicken from marinade; put in the heated butter. Adjust the flame to medium; cook for 15 minutes (7 minutes for each side) until chicken turns golden brown, turning the pieces once during the process.
Now add the remaining lime juice and minced garlic with ½ cup of chicken stock to the chicken. Stir until all the ingredients combines well enough to make a creamy sauce. Reduce the flame to simmer; continue cooking with occasional stirring for 5 more minutes; test doneness of the chicken by using a sharp pointy knife or pointy ends of the fork. When it is done, off the heat and transfer chicken to a serving bowl; collect the drippings from skillet; pour it over the chicken. Use 2 tablespoons of thinly sliced fresh cilantro to garnish it. Or you can replace cilantro with some of your favorite herbs.
Top it with a little lime zest if you like. Serve it hot with steamed broccoli and white rice. It would go well with mashed potatoes and green salads too.
Notes & Tips:
Leftover chicken or turkey can be used for this recipe.
Use olive oil instead of butter if you are on weight watchers list.
Pound the chicken lightly to cook it in less time.
Cooking time varies depending on the thickness of the chicken you are using.
You can skip chicken stock if you don’t want the juicy texture.
Garlic powder can be used instead of minced garlic.
If you want to go healthy, use coconut oil instead of butter and olive oil.
Add fresh vegetables to the dish to make it more appealing.
Other parts of the chicken (thighs, drumsticks) can also be used.
For less cleaning use a zip lock bag instead of bowl to marinate chicken.
Sauce can be used as a salad dressing.
