Spicy Baked Chicken Recipe
Spicy chicken is one of the most appreciated foods in our country; and has been a constant companion of all the household kitchens. This recipe explains a simple way to make spicy chicken with ingredients you would always find in your pantry. It is very economical and offers an amazing mix of sweet and savory flavors with juicy chicken. Enjoy the spicy rich taste of this deliciously looking baked spicy chicken.
1 chicken (cut into pieces)
1 medium sized onion (chopped)
2 small garlic cloves (pressed)
½ teaspoon dry mustard
½ teaspoon red pepper flakes
¼ teaspoon freshly ground black pepper
Salt to your taste
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon soy sauce
¼ teaspoon ginger
1 tablespoon brown sugar
½ cup chicken broth
Preheat the oven to 350 degrees F; line a baking sheet with foil and coat with non-stick cooking spray.
Clean the chicken under running water. Pat with paper towels to dry off excess. Arrange chicken pieces on the prepared baking sheet skin side down in a single layer. Set aside.
Heat 2 tablespoons of olive oil in a saucepan over medium-high flame. Add ¼ teaspoon ginger, pressed garlic and finely chopped onions to the hot oil; sauté for 3 minutes until the mixture become softened.
Add ½ cup chicken broth with 1 tablespoon brown sugar, 1 tablespoon soy sauce, 1 tablespoon lemon juice, ½ teaspoon dry mustard, ½ teaspoon red pepper flakes and ¼ teaspoon freshly ground black pepper to the onions. Stir to combine the ingredients well to form sauce; bring to a boil. Adjust the heat to low; cook the sauce with occasional stirring for 5 minutes until slightly thickens.
Using a brush, coat chicken pieces with hot sauce. Make sure to coat all sides evenly. Bake for 50 minutes at 350 degrees F; occasionally basting pieces with remaining sauce. Test the doneness of the chicken by cutting thickest part with a fork tip or use a thermometer to read the temperature. The ideal temperature is 165 degrees. Take the tray out when chicken cooked through; Transfer chicken to a serving platter; garnish with your favorite herbs (parsley, basil or lime wedges may be). Serve it hot with steamed vegetables and green salads. Rice and green beans will also be a good combination with spicy chicken.

For more simplified process combine all the ingredients except chicken and cooking spray, pour over the chicken on baking dish; bake for 50 minutes at 350 degrees F. for this method use onion, ginger and garlic powders instead of raw.
