Santa Fe Chicken Tostadas Recipe
A spoonful of lime juice over the crunchy tostados and tender chicken makes a refreshing and filling meal for a busy weeknight. It takes only 10 minutes to put together with all the available ingredients at hand; serve it as a light dinner or as a salad along with other dishes. Include all your favorite extra ingredients to this basic recipe. Enjoy this refreshing dish on a hot summer day.

4 tostadas (pre – made)
1 can black beans (rinsed and drained)
Salt to taste
1 tablespoon lime juice
2 tablespoons olive/vegetable oil
½ cup shredded lettuce
½ cup low-fat cheddar cheese (shredded)
½ teaspoon freshly ground black pepper
½ tablespoon chili powder
2 medium sized garlic cloves (minced)
½ tablespoon cumin powder
3 skinless and boneless chicken breasts
2 medium sized tomatoes (chopped)
2 tablespoons fresh parsley leaves
¾ cup water
Clean the chicken breasts under running water; use a paper towel to pat dry the chicken. Cut into 1 inch cubes (or your preferred shape).
Season the chunks with ½ teaspoon pepper and salt.
Heat 2 tablespoons olive oil in a large skillet over medium flame. Add minced garlic and sauté for 10 seconds until it becomes fragrant. Now, add chicken pieces to the garlic; sauté for about 2 minutes until light golden brown.
Pour ½ cup of water over chicken in the pot; season with ½ tablespoon lime juice, ½ tablespoon chili powder and ½ tablespoon cumin powder. Adjust heat to low; cook for 5 minutes until chicken infuses the spices; add rinsed, drained black beans to chicken; cook for another 3 minutes until chicken and beans cooked completely.
Take 4 prepared Tostados; spread chicken and beans mixture equally between tostados. Top with shredded lettuce, chopped tomatoes and shredded cheddar cheese; sprinkle remaining lime juice and fresh parsley leaves over tostados. Enjoy these easy and tasty tostados when you are in the mood for light meal or as a salad.
Notes & Tips:
You can use any other parts of the chicken for this recipe.
Leftover chicken or turkey can be used.
For a variation use shrimp instead of chicken.
Add as many spices and vegetables as you like
Use rotisserie chicken to simplify the process.
Using different color tomatoes makes it more appealing.
Lime juice can be omitted or replaced with lemon juice.
