Lemon Feta Chicken with Oregano Recipe
Discover the delicious extension to the lemon chicken with a few Mediterranean secret ingredients here. Though the recipe suggests you to use the given quantities, feel free to add more/less to get desired flavors. It mainly uses three main ingredients but you can expand the list to get the taste you hope to achieve. Along with appealing aroma of oregano, lemon and feta cheese helps you create this Greek style dish in your own kitchen.
6 boneless and skinless chicken breast halves
½ teaspoon freshly ground pepper
¾ teaspoon garlic powder
3 tablespoons lemon juice
2 tablespoons fresh oregano(chopped) or 1 teaspoon dried oregano leaves
½ cup feta cheese(crumbled)
2 tablespoons olive oil
Preheat the oven to 350 degrees F. Coat a baking sheet with cooking spray. Set aside.
Rinse the chicken breasts under running water. With a paper towel pat the remaining water to dry the pieces; trim off visible fat.
In a bowl add 2 tablespoons of olive oil, 2 tablespoons of lemon juice, ½ teaspoon of pepper and ¾ teaspoon of garlic powder. Mix it well. Brush the chicken pieces with this mixture evenly.
Arrange the pieces in a single layer on prepared baking dish; pour remaining mixture on the pieces.
Sprinkle 2 tablespoons of chopped fresh oregano over the pieces.
Bake at 350 degrees F for 30 minutes, uncovered. Take out the sheet; test for doneness with a fork. If it is still pink in the middle, put the baking sheet back in the oven and cook for 10 more minutes. When it is done, sprinkle crumbled feta cheese and remaining tablespoon of lemon juice over the pieces.
Heat the broiler. Broil the chicken for 3 minutes until the cheese turns golden brown. Place it on a serving platter and serve it hot with salads.
The wonderful combination of feta cheese, lemon and the lovely aroma of oregano will give you a free pass to the Mediterranean days. And it comes with the additional advantages of being cheap, easy and tasty, making it a ‘go-to’ meal for busy weeknight dinners.
Notes & Tips:
Any part of the chicken (thighs, drumsticks and breasts etc) can be used for this recipe.
For a different flavor add sun-dried tomatoes with feta cheese.
Use as many spices as you like to coat the breasts before baking.
Leave out the broiler part if it seems time consuming. Instead put it in the oven for 5 more minutes.
