Italian Chicken Kebabs Recipe
It’s time to discover the easy and tasty marinades as grilling season is approaching; when it comes to food all appetizers share the same goal to open our appetite and this dish does its job perfectly by using the simple ingredients to deliver the delicious kebabs. This easy recipe is an adaptation of the original Italian version; you would be delighted to know how few ingredients this recipe takes to give the mouth watering kebabs. Gather all the vegetables from the back seat of your refrigerator; grill them along with chicken; these Italian dressed chicken kebabs are perfect for dinner parties and gatherings when served as an appetizer.
Preparation time: 35 minutes (marinating time also included)
Cooking time: 15 minutes
3 boneless and skinless chicken breasts
1 cup Italian dressing
¾ teaspoon garlic powder
7-8 wooden skewers for grilling
Rinse chicken breasts under running water; using paper towels dry off excess. Trim off any visible fat. Cut into 1-2 inch chunks; set aside.
Divide 1 cup of Italian dressing into three portions; reserve the third for basting.
Combine 2 portions of Italian dressing with ¾ teaspoon garlic powder in a reseal-able plastic food-storage bag; mix the ingredients well.
Add chicken to the Italian dressing and toss to coat; seal the bag; make sure to squeeze out the air before sealing. Keep in the refrigerator and let it marinate for 3o minutes at least.
Preheat grill to medium – high heat; lightly coat the grate with oil.
Take 7-8 preferred skewers; take marinated chicken out of fridge; discard the marinade; stick a skewer through the middle of each chicken piece; adjust the pieces together; distribute chicken evenly between the skewers.
Place skewers on the hot grill; cook for 12-15 minutes, flip the skewers and baste pieces with reserved dressing twice after every 5 minutes until both sides browned and chicken cooked through. Remove from the grill; slide them off the skewers to a serving platter; sprinkle some fresh seasonal herbs over the pieces if you like. Serve hot with a nice green salad.
Notes & Tips:
For a variation use shrimp instead of chicken
Leftovers will make a delicious sandwich; grill whole breast for sandwich.
Any part of the chicken can be used for this recipe.
Grilling time varies according to the thickness of pieces.
