How to Make a Simple Macaroni Salad

Sun is shining on us wearing a warning sign of hot summer. So here is the Cool Macaroni Salad recipe to uplift your mood on a hot day and to refresh your memory of eating it a lot as a child. Best thing about this salad is that it takes only 20 minutes to cook with a few simple ingredients at home. You can serve it hot but tastes much better after refrigerating it for an hour or so.

Ingredients

      2 cups elbow macaroni(Cooked according to the directions)

      1 cup Mayonnaise

      2 tablespoons vinegar

      1 teaspoon sugar

      1 teaspoon salt

      1/2 teaspoon ground black pepper

      1 cup thinly sliced celery

      1 cup chopped green or red bell pepper

      1/4 cup finely chopped parsley

      1/4 cup finely chopped onion

      1 cup roasted peanuts

      1 teaspoon yellow mustard

Now begin the preparation by cooking the macaroni in salted water. Don’t forget to add salt to the water.

Cook it for 7-8 minutes then remove it from the flame and Drain excess water. Related image             

Rinse it under cold water for a minute or two. Keep it aside and let cool at room temperature.

Note: Macaroni absorbs salt when you cook it but rinsing it under the cold water might reduce the saltiness to some extent. Adding a bit more salt to the water before cooking the macaroni is recommended to avoid this.

In a bowl add mayonnaise, vinegar, salt, sugar, black pepper and mix well until it’s smooth. Taste the dressing before adding it to the

salad. Adjust the quantities to match up to your taste buds.

Put the macaroni in a large serving bowl and add finely chopped onions, bell peppers, celery and roasted peanuts.

Crush the roasted peanuts before adding it to the mix to enhance the aroma. Pour the dressing on the macaroni.

Toss the stuff again and again until it is distributed evenly. Finally decorate the salad with finely chopped parsley to make it more presentable. Refrigerate it for 1-2 hours and serve it chilled.

The cool macaroni salad for barbeques, picnics and summer weekends is ready. You can always customize the classic recipe with your favorite ingredients. Carrots and cucumbers will do a good job brightening the flavor. Go for some tuna, egg or shrimp if you are into non-vegetarian. Cover the remaining with an aluminum foil and store it in refrigerator to keep it fresh up to 3 days.

Tips:

  1. If the raw smell and taste of onion disturbs you, use a few drops of lemon on it before adding it to the salad.
  2. Having too much Mayonnaise is inconvenient for you then replace 1/2 cup of Mayonnaise with fat free yogurt. It doesn’t compromise the taste and would go unnoticeable (unless you say it).
