Honey Mustard Barbecue Chicken Recipe
The blend of spicy mustard and sweet honey makes perfect barbeque sauce for the summer. Honey adds the sweetness which appeals to the kids and balances the overwhelming flavor of mustard which helps to achieve the end result you are aiming for. There several easily available honey varieties in the market; some are very intense. Choose the type which works for you. This delicious honey mustard is not only used as a barbeque marinade but also a great universal dipping sauce for almost all the snacks and meals. Make the sauce with an extra batch of ingredients. You can store it in the refrigerator for a week. Serve this spicy and sweet barbecue chicken at small parties and family gatherings.
Preparation time: 10 minutes (marinating time included)
Cooking time: 18 minutes
2 skinless and boneless chicken breasts
½ cup yellow mustard
¼ cup honey
¾ teaspoon crushed red pepper
1 tablespoon Worcestershire Sauce
Salt to taste
Rinse the chicken under running water; dry off excess with paper towels. Cut each breast into half lengthwise; sprinkle salt over the pieces.
In a large bowl mix ½ cup yellow mustard, ¼ cup honey, ¾ teaspoon crushed red pepper, 1 tablespoon Worcestershire Sauce. Whisk until all the ingredients combines well into sauce. Taste it and add spices and increase quantities to your requirements. Divide the sauce into three portions. Reserve the second portion for basting and the third to serve as dipping sauce.
Pour first portion of sauce over chicken breasts; toss to coat well.
Preheat the grill for medium; lightly coat the grate with oil.
Place coated pieces on the grill; for best result grill over indirect heat; cook for 15-18 minutes; while grilling flip and baste the pieces thrice after every 5 minutes with reserved sauce until chicken cooks through and juices run clear.
Remove from the grill; arrange them on a serving platter; garnish with thinly sliced fresh lime wedges. Serve hot with the reserved dipping sauce accompanied by mashed potatoes.
