3 pounds chicken wings
½ cup Dijon mustard
1 tablespoon olive oil
3 medium sized garlic cloves (coarsely chopped)
Salt to your taste
½ teaspoon freshly ground black pepper
½ teaspoon grated ginger
1 teaspoon honey
2 teaspoons Worcestershire sauce
Preheat the grill for medium-high; lightly coat the grate with oil.
Clean the chicken wings under running water; Pat them dry with paper towels. Split the joints; separate them from drumsticks; remove the tips to make it easy to eat.
Season wings with ½ teaspoon black pepper and salt.
Place seasoned chicken wings on the grill; grill for about 4 minutes turning wings over once after 2 minutes;
In the meantime mix ½ cup Dijon mustard with chopped garlic, 1 teaspoon honey, 1 tablespoon olive oil, ½ teaspoon grated ginger, 2 teaspoon Worcestershire sauce and salt in a bowl. Whisk it until all the ingredients combines well into sauce. Taste it and add spices and herbs to your requirements; increase its quantities if needed.
Using a brush, glaze chicken pieces evenly on all sides with Dijon mixture. Grill for 10-12 minutes while turning pieces frequently; baste the wings constantly with remaining mixture until chicken cooks through.
Transfer to a serving platter when it’s done; garnish with lemon wedges; serve hot with your favorite dipping sauce.
You can marinate the wings in Dijon mixture for 30 minutes and directly grill it skipping all the blazing and basting. But you have to be very careful while grilling because marinated wings are quick to glaze and quick to burn.
