Kebabs are one of the most loved classics often served at restaurants and family gatherings as an appetizer. Being an appetizer it really lives up to its reputation; a plate full of attractive chicken and vegetables chunks with pleasing aromas will be enough to stir up the hunger in a crowd; follow the recipe to create that restaurant magic at your home; swap the listed vegetables with your favorite ones. It doesn’t need a skilled chef to make it; try it once; it might convince you to limit your restaurant visits.

      Servings: 4

      Preparation time: 35 minutes (marinating time also included)

      Cooking time: 12 minutes


      3 skinless and boneless chicken breasts

      1 tablespoon lemon juice

      1 medium zucchini (cut into 1 inch rounds)

      1 large red bell pepper (cut into 2 inch pieces)

      1 large yellow bell pepper (cut into 2 inch pieces)

      1 large green bell pepper (cut into 2 inch pieces)

      2 small onions (cut into chunks)

      1 bottle of Italian dressing


Rinse chicken breasts under running water; using paper towels dry off excess. Cut into 1-2 inch chunks; set aside.

Put onion chunks, zucchini rounds and bell peppers in a large bowl; pour ½ bottle of Italian dressing over the pieces; sprinkle ½ tablespoon of lemon juice; toss all the pieces with your hands to coat well. Cover and refrigerate it.

In another bowl add chicken cubes with remaining Italian dressing and lemon juice; make sure to coat pieces evenly; cover and refrigerate.

Preheat grill to high heat; lightly coat the grate with oil.

After 30 minutes take both the bowls out of the fridge; thread chicken and vegetable pieces alternatively onto skewers; distribute pieces evenly between the skewers; adjust together.

Place skewers on the hot grill; cook for 7-8 minutes, flipping once after 3 minutes until chicken and vegetables cooked through. Remove from the grill; slide them off the skewers to a serving platter; sprinkle with some fresh herbs (if you like); serve hot with a nice green salad.


Notes & Tips:

      Add mushrooms and tomatoes to make it more colorful and tasty.

      For a variation use shrimp instead of chicken

      These grilled vegetables and chicken will make a delicious sandwich; grill whole breast for sandwich.

      Lemon juice can be omitted or replaced by lime juice.

      Any part of the chicken can be used for this recipe.

      Grilling time varies according to the thickness of pieces.

      For easy clean up marinate chicken and vegetables in zip lock bags.

      Soak wooden skewers in water for 30 minutes before grilling
