Easy & Crispy Cereal Chicken Tenders
A remarkably crunchy chicken tender is a perfect way to appease your kids hunger; may be yours too. This version of recipe uses the combination of cereal and crackers for the crust but you can swap it with the readily available, equally crunchy crusts out there. Either way, a bowl of honey mustard sauce or chilled yogurt & mint sauce is a nice accompaniment with crispy chicken tenders.

2 boneless and skinless chicken breasts
1 cup crunchy sweetened cereal (crushed)
1 cup crackers (crushed, cheese or butter flavored are preferable)
1 egg (beaten)
Salt to your taste
½ teaspoon freshly ground black pepper
1 tablespoon olive oil
Preheat the oven to 350 degrees F. Line a baking sheet with foil and coat with cooking spray.
Rinse chicken breasts with water; pat dry with paper towels. Trim off the visible fat (if there is any) and Cut lengthwise into 1 inch strips (or thinly like tenders);
Season it with ½ teaspoon pepper and salt.
Mix 1 tablespoon olive oil to the beaten egg in a bowl; whisk it to form a smooth texture. Take another bowl and combine finely crushed crackers and cereal.
Working with one at a time, dip chicken strips in the egg mixture; shake off excess; now dredge the piece in crushed cereal and crackers.
Lightly press the mixture into strips with your hands and make sure to coat on all sides; repeat the process for all the tenders.
Arrange all the cereal coated chicken strips on the prepared baking sheet; bake at 350 degrees F for 15-18 minutes until chicken cooks completely. Take the tray out when it’s done; transfer to a serving platter; garnish with fresh herbs if you like; serve this crispy and tasty chicken tenders hot; accompanied by your favorite dipping sauce.
Notes & Tips:
To simplify the process use pre-made chicken tenders.
Mix spices and herbs in egg mixture before dipping the tenders if necessary.
Sprinkle 2 tablespoons of melted butter over chicken strips before baking to keep it moist.
Use 2 tablespoons of grated parmesan cheese as a topping over the tenders.
To make it interesting add ½ teaspoon garlic powder to the cereal and crackers mixture.
To crush cereal and crackers without hurting your hands pack them in a zip lock bag and crush using a wooden spatula or any other object which you feel suitable to use without damaging the bag.
