Cranberry Chicken Loaf Recipe
Being delicious as it is, more than half of the meat loafs leaves a stroke of ‘heaviness’ on our digestive systems. But there is one ingredient which has an advantage to subdue the heaviness when included in the dish. Cranberries.. Cranberries offer a nice alternative for the people who likes to avoid the heaviness of meat loafs. It doesn’t camouflage the taste of the meat though. If you enjoy finding new combination of flavors with the familiar dishes, give this one a try. Make it your own by changing the quantities and adding spices to the chicken mixture.
1 pound ground chicken
½ cup Cranberry sauce
½ cup bread crumbs
3 tablespoons brown sugar
½ cup milk
Salt to your taste
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning
½ teaspoon pepper
1 medium onion(finely chopped)
1 tablespoon fresh coriander(chopped)
1 tablespoon tomato ketchup
1 tablespoon steak sauce
2 tablespoon of dried cranberries
Preheat the oven to 350 degrees F. Line a foil in a rimmed baking pan; coat it with cooking spray and set aside.
Take a wide bowl; add 1 pound ground chicken, ½ cup bread crumbs, ½ cup milk, 1 egg, ¼ teaspoon garlic powder, ¼ teaspoon Italian seasoning, ½ teaspoon pepper, finely chopped onions, 1 tablespoon tomato ketchup, 1 tablespoon steak sauce, 1 tablespoon fresh coriander and salt. Mix it well (preferably with hands) until it is smooth. Shape the chicken mixture into your desired loaf shape; Transfer it to the baking pan; bake at 350 degrees F for 30 minutes, uncovered.
In the meantime, soak 2 tablespoons of dried cranberries in a bowl with 4 tablespoons water. Add ½ cup cranberry sauce and 3 tablespoons brown sugar in another bowl. Heat it in a skillet on the stovetop over very low heat. Heat enough to dissolve the sugar in the sauce completely. Off the heat; separate the cranberries from water; add them to half of the sauce mixture and save it to serve with loaf.
After 25 minutes pour the remaining half of sugar and sauce mixture on top of the loaf in baking pan; spread it evenly. Bake for another 25 minutes.
Take it out of the oven when it’s done. Cut in desired pieces. Drizzle the leftover sauce from the pan over the loaf. Accompany it with saved cranberry sauce mixture. Unlike normal meat loafs this cranberry version is very light with subtle flavors and sweet sauce.
Notes & Tips:
This recipe can be made with the ground turkey or with ground beef.
Increase the quantities of cranberry and brown sugar if you like more sauce with the loaf.
You can substitute steak sauce with your favorite BBQ sauce.
Add more seasonings to the loaf mix to enhance the flavors to suit your taste buds.
Feel free to add vegetables to the chicken mixture. Slice thinly.
