Chicken with White BBQ Sauce Recipe
This mayonnaise white BBQ sauce provides a nice change from the traditional sweet BBQ sauce and makes a delicious addition when paired it with chicken; the best thing about this dish would be leftovers; combine the leftover chicken pieces with mixed greens and dress it with white sauce; you would be delighted with this light yet tasty salad.

- 8 chicken thighs
- ½ cup mayonnaise
- 5 tablespoons white wine vinegar
- ½ teaspoon lemon zest
- ½ teaspoon freshly ground black pepper
- 1 teaspoon spicy mustard
- Salt to taste
- 1 teaspoon horseradish
- 1 teaspoon sugar
- 1 tablespoon lemon juice (freshly squeezed is preferred)
- ½ teaspoon ground cumin
- ½ teaspoon onion powder
- ¾ teaspoon paprika
- 1 tablespoon olive oil
Rinse chicken under running water; with the help of paper towels pat dry the excess.
Make the rub by mixing ½ teaspoon lemon zest, ½ teaspoon cumin, ¾ teaspoon paprika, ½ teaspoon onion powder, 1 tablespoon olive oil and salt in a wide bowl; combine well.
Use your fingers to rub the mixture on chicken pieces; make sure to coat all the sides; cover and keep in the refrigerator and let it marinate for 2 hours at least. But the flavor will be much better if you let it marinate longer than 2 hours.
In the mean time combine ½ cup mayonnaise, 5 tablespoons white wine vinegar, ½ teaspoon black pepper, 1 teaspoon spicy mustard, Salt, 1 teaspoon horseradish, 1 teaspoon sugar and 1 tablespoon lemon juice in a bowl; stir for a minute until sugar melts and all the ingredients combines into a creamy sauce. The flavors in the sauce intensify over time; prepare it ahead for best results.
Preheat the grill for medium-high; lightly coat the grate with oil.
Take the chicken out of the refrigerator; Place on the hot grill; grill for 5 minutes undisturbed; flip the pieces once after 5 minutes; and continue cooking for 20 more minutes turning pieces once or twice until chicken cooks through and juices run clear.
Remove from the grill; arrange them on a serving platter; garnish with thinly sliced lemon wedges; pour the white BBQ sauce over chicken; serve hot with a nice salad.
