Baked Curry Honey Mustard Chicken Recipe

This new marinade with unique flavors develops properly and delivers intended taste to the chicken. Perfect blend of sweet and spicy with a hint of curry makes it a filling meal when served over all types of rice. All available varieties of mustard have a unique flavor; pick your best to enhance the quality of your dish.
Preparation time: 40 minutes (marinating time included)
Cooking time: 40-45 minutes
2 boneless and skinless chicken breasts
½ teaspoon minced garlic
½ teaspoon cayenne pepper
½ teaspoon onion powder
3 tablespoons curry powder
¼ cup honey
3 tablespoons mustard
2 tablespoon melted butter
½ teaspoon ground cumin
Preheat oven to 350 degrees F. Line a rimmed baking sheet with heavy duty foil and coat with non-stick cooking spray. Set aside.
Clean the chicken under running water; Pat them dry with paper towels; cut each piece into half lengthwise.
In a large bowl mix ½ teaspoon minced garlic, ½ teaspoon cayenne pepper, ½ teaspoon onion powder, 3 tablespoons curry powder, ¼ cup honey, 3 tablespoons mustard, 2 tablespoon melted butter, ½ teaspoon ground cumin. Whisk it until all the ingredients combines well into sauce. Taste it and add spices and increase quantities to your requirements. Divide the marinade into three portions; save the third for basting.
Add chicken pieces to marinade; toss to coat well; cover and refrigerate it for at least 30 minutes. If time permits let it marinate for 3-4 hours for best results.
Take marinated chicken out of the fridge after 30 minutes; discard the marinade. Arrange pieces on prepared baking sheet in a single layer; Bake them at 350 degrees F for 40-45 minutes; while baking baste the pieces twice after every 15 minutes with reserved marinade until chicken cooks through and juices run clear.
Take the tray out when it’s done; transfer to a serving platter; garnish with fresh parsley leaves if you like; serve hot over fragrant rice accompanied with steamed vegetables.

Substitute melted butter with olive oil for healthier version.

If you want to make sauce use an extra batch of all the ingredients except chicken and cooking spray. Add 3 tablespoons of water along with the ingredients to a saucepan over high heat. Bring to a boil; adjust heat to low; let it simmer until sauce gets desired consistency.
